RECIPE: Get your daily protein in one hit, make it a non-meat day and your body will love you for it! Veteran chef Phillip Nordt explains how.

Did you know that humans are herbivores not omnivores or carnivores – that is a fact!

Clear signs are teeth maulers and length of guts. It’s three metres for a dog, for example, and around three times the length for humans.

Have you heard about dogs with high cholesterol or high blood pressure? No, it’s because their digestion of meat products is much quicker than going through human digestion tracts where the last bit of nutritional or fatty matter is absorbed and used.

Humans figured out that meat is a quick fix for protein and some tribes became hunters and gatherers. But where humans settled, it quickly became plant based.

A vegan or vegetarian diet can extend your lifespan for another 10 years.

Actor Clint Eastwood is vegan and former President of the US Bill Clinton would be very sick by now if he had not changed to a vegan diet, so think about your health first.

You want to lose weight and get healthy? You exercise daily, go to the gym but there are no signs of improvement? Or are you on a Keto diet? It works but mainly animal protein and fat is not the answer in the long run, it will have repercussions.

 

Here is the secret. Go vegan or at least vegetarian for one month without going hard on the carbs and you will have a better result.

 

But there are other things, like only eating twice a day – skip breakfast and drink water perhaps with a few slices of lemon and more water during the morning – and opt for an early lunch, give it a break of 7-8 hours before dinner (intermittent fasting) and you are on the right track.

Keep the portions in check, only one plate per meal.

RECIPE

Organic tofu, marinated and grilled with sauteed garlic bok choy

 

Serves four people

Ingredients

Double packet of Tonzu organic tofu (Prime Foods)

4 tbsp of Kikoman or other, wheat free Soy Sauce         

2 tbsp of fresh chilli chopped                                             

2 tbsp of chopped garlic                                                      

2 tbsp of chopped ginger                                                    

1 tsp of sesame oil                                                  

4 tbsp of peanut oil                                                               

Nasturium or flowering Maire or Coriander for garnish

Sauteed garlic and bok choy

2 bunches of bok choy, leaves separated                  

2 garlic cloves sliced                                              

1 onion sliced julienne                                           

2 tbsp of peanut oil                                                              

1 tsp sesame oil                                                            

 

Method for tofu

1. Slice the tofu in 2-3 cm squares.

2. Mix your marinade and pour over the tofu.

3. Marinate for at least 30 minutes.

4. Grill on BBQ or hot plate or heavy duty pan until nicely browned on all sides.

 

Method for sautéed garlic and bok choy

1. Place peanut oil in hot pan.

2. Add garlic, toss and add all other ingredients, toss several times, season with salt and pepper, place lid on top and let cook for up to two minutes, add the sesame oil.

 

Plating

1. Serve bok choy neatly on a warm plate.

2.Place cubes of grilled tofu on top, garnish and serve.

3. It really needs nothing else but you can add toasted sesame seeds or a bit of fresh lemon with soy.
